French Style Potatoes

Way back in the mid 1980’s I watched a cooking show called “The Frugal Gourmet”. I got some good tips from that show. This is a recipe that I kept. It is supposed to a recipe from an old French cookbook from the 1770’s.

  • 5 medium Potatoes, peeled and quartered
  • 1 medium Onion, chopped
  • 2 tablespoons All Purpose Flour 
  • 4 tablespoons Extra Virgin Olive Oil (EVOO)
  • 2 teaspoons fresh Parsley, destemmed and chopped
  • Salt and pepper to taste
  • Juice of 1 Lemon
  • Zest of 1 lemon

Preheat oven 450 F.

Mix everything in a baking dish. Bake until brown for 30 minutes.

    I made these potatoes tonight; they were divine! I did mix everything but the potatoes in the baking dish first, and then added the potatoes and made sure they were covered well with the *roux* mixture.

    You have posted a bunch of recipes that I want to try! Thanks!
