Way back in the mid 1980’s I watched a cooking show called “The Frugal Gourmet”. I got some good tips from that show. This is a recipe that I kept. It is supposed to a recipe from an old French cookbook from the 1770’s.
- 5 medium Potatoes, peeled and quartered
- 1 medium Onion, chopped
- 2 tablespoons All Purpose Flour
- 4 tablespoons Extra Virgin Olive Oil (EVOO)
- 2 teaspoons fresh Parsley, destemmed and chopped
- Salt and pepper to taste
- Juice of 1 Lemon
- Zest of 1 lemon
Preheat oven 450 F.
Mix everything in a baking dish. Bake until brown for 30 minutes.
I made these potatoes tonight; they were divine! I did mix everything but the potatoes in the baking dish first, and then added the potatoes and made sure they were covered well with the *roux* mixture.
You have posted a bunch of recipes that I want to try! Thanks!
Sho, You are welcome. I’m so glad that you like them! That is my goal for this blog. I really enjoy the feedback on the recipes. Please let me know what you think of the others that you try. Thanks again and happy cooking! Linda
